Pumpkin Soup & other ideas to use up your pumpkin this year!
This year I was on a mission to use up the pumpkin that didn’t get carved at Halloween. So what did I do with it? I made a delish pumpkin soup, roasted the seeds, pumpkin puree and muffins.
I wanted to share the soup recipe but if you want any of the other recipes I would be happy to share. My pumpkin energy balls are already up on my Blog.
Pumpkin Soup
Ingredients:
8 cups of pumpkin pieces cubed
6 cups of vegetable broth (or any broth of your choice)
5 medium carrots peeled and cut into pieces
2 apples peeled and cut into big pieces
1 onion chopped
2 garlic cloves
1 tsp of cumin
1/4 tsp of nutmeg (or up to 1/2 tsp if you like nutmeg)
Salt & pepper to taste
1 Tbs of olive oil
Quick & simple croutons:
Cut up in cubes some stale bread or baguette (if you dont have stale bread, use regular bread)
In a pan, add in 1 Tbs of olive oil or butter, add your cubed bread and stir until golden
I added dried rosemary and chili flakes which was yummy
How to:
Add you olive oil to the bottom of the pot, heat on medium and then add your onion and stir until transparent
Add the garlic, cumin and nutmeg and stir for 30 sec
Add the broth, carrots, apple and pumpkin
Bring to a boil and then bring down to a simmer (medium) for 30 min or until your pumpkin and carrots are soft
Blend until smooth
I added croutons and then ready to be served!

Other ideas of what to do with your pumpkin:
Steam big pieces of pumpkin and once cooled, blend it up to make a puree. I will share a muffin recipe, energy balls and homemade granola you can make with your puree.
Roast the seeds with a little sea salt…yum!
