Chickpea salad

This is a great salad that can be used to replace tuna salad in a sandwich or wrap and otherwise can be used as a side salad! In the last batch I made, I made avocado toast and added it on top….it was delish. The beauty of this recipe is you can keep it simple and use what you have in the house in terms of adding herbs, greens, veggies etc.

Ingredients:

  • 1 can of chickpeas

  • handful of chopped fresh parsley

  • handful of chopped kale

  • 2 Tbs vegan or regular mayo

  • salt and pepper to taste

  • 1/2 tsp of turmeric

  • 1/2 tsp of cumin (optional but I like the added flavour)

How to:

  • mush the can of chickpeas in a big bowl with a fork or blend if you want it more smooth

  • add in the rest of the ingredients and mix it all up and you are all set!

Enjoy it on a toast, add to an avocado toast, wrap etc

Note: to make it more of a side salad, add shredded carrot and chopped celery to bowl and have fun playing around with some different veggies or flavours…
