Blueberry Oat Muffins

These muffins are a big hit in my household…with 3 growing big kids I need to have healthy snacks available! They make a great after school snack and perfect for their lunches.

  • 2 cups of oat flour (you can use any flour)

  • 2 tsp of baking powder

  • 2 tsp of cinnamon

  • 1/4 cup of almond milk and add 1 tsp of apple cider vinegar

  • 2 flax eggs (1 flax egg: 1 Tbs of ground flax and 3 Tbs of water) or substitute with 1 egg

  • 1/4 cup of avocado oil or olive oil

  • 1/4 cup of coconut sugar (or replace with maple syrup)

  • 2 Tbs of maple syrup

  • 1 tsp of vanilla extract

  • 1 1/2 cups of blueberries

*Set the oven at 350F

*Mix your dry ingredients together and in a separate bowl mix the wet ingredients. Mix them both together and only at the last minute add your frozen blueberries

*Bake for 20 min or until a toothpick comes out clean!
