Week 1: Green Pina Colada Smoothie
Our green smoothie challenge starts with a crowd pleaser!
Ingredients:
-1 frozen banana (you can add in 1 cup of ice cubes if you are not a fan of bananas)
-1 cup of frozen pinneaple
-1/2 cup of spinach (you can use kale or any greens, but for kids or for a better consistency spinach is a good go-to!)
-1/2 cup of coconut milk (from a can makes it creamier and otherwise I like to use the store bought coconut milk in a carton or homemade*).
-1 Tbs. of ground flax
-1 Tbs. of chia or hemp hearts
-splash of maple syrup
-water

**my kids like this smoothie thick, so I usually put all the ingredients into the blender and add the water at the end…filling it up just before the top of the fruit…once you start blending you can add more water if too thick and if you prefer your smoothie a little less thick add water until you like the consistency!
**I like to bump up the nutrition of the smoothie by adding in flax and chia/hemp hearts but you can make it without also!
**Another great variation: try adding fresh mint to the smoothie
